Southwestern Chicken Salad

Here is a photo of the Southwestern chicken salad I made for our office potluck last week Wednesday. I think it went over well and I had fun making it!

It is super easy to put together - here is a recipe for you:




Ingredients:
1 lb. boneless skinless chicken breasts
2 tbl. chili powder
1.5 tbl. olive oil
1 tbl. kosher salt
Canned corn, whole kernels
Canned black beans, rinsed
Scallions, sliced
3 roma tomatoes, large dice
1 cup shredded Mexican cheese
5 cups romaine lettuce, chopped
Spicy ranch dressing

Rinse the chicken and toss with the chili powder, olive oil and salt. Marinate for one hour and grill under done, about 6-8 per side. Set aside and let cool. Place romaine lettuce in large salad bowl and top, in rows, with corn, black beans, scallions, tomatoes and cheese. Once chicken has cooled chop into large diced pieces and add another row onto the salad with it. Serve with the dressing.
